1) Performance is unlikely to be any better from the client's point of view, as any reasonable hard drive should be able to saturate the available network bandwidth.
2) You certainly can arrange for the revised system to mount the external "drive' in the same place with the same naming convention, such that your Plex setup would still work. Changing the Plex config is also not a difficult task. It is unlikely that it will mount in the same place with the same naming, without some fiddling around, so you either have to deal with that fiddling, or deal with tweaking the Plex config you currently have.
