If you're running Bookworm on the zeroW, adding wpa_supplicant.conf to the boot partition does nothing. Further, Bookworm does not falback to self assigned mdns/zeroconf addresses when no DHCP server is found which it won't be on the USB link unless your Macbook is running one.
Which machine sees the RNDIS network adapter? And have you enabled the g_ethert module (or equivalent) on the zeroW? If you haven't that RNDIS interface you might be seeing on the Mac is not the Pi.
If you are using the ethernet gadget, make sure that the Pi and and the Macbook end have different IP addresses and that they are in a different subnet to your WiFi.
You might want to refer to my guide USB Ethernet Gadget A Beginner's Guide but be aware I have still to update it for Bookworm.
And tell us what you put into your config.txt, what OS you're running, and what other changes from stock you have made.
