Personally, I use an external SSD, connected via a USB to SATA cable, placed underneath my RPi5 in its recommended case.

Works well for me, but if I didn't already have disks, I'd go with an NVME drive.

I did that with Pi4Bs. I really prefer the tidier packaging with an M.2 HAT+ in the official case. Even nicer is the Pineboard Nano that allows the case lid to be put on.
My setups are somewhat similar - two P4B's, my P400 and a P3B+ all use USB to SATA connected SSD's** (although not all "USB boot" - the oldest P4B setup uses the SSD for "data only"). My P5B is now NVMe booted, mounted in a Pimoroni case with a M2 HAT+ mounted above an active cooler.
