Beware I myself have not used vdesktop in a few years!
To exit, I think the key sequence was ctrl+]]]. I think you could also issue a shutdown command from within the container which would exit too, but with a shutdown sequence.
Vdesktop runs the image's systemd boot sequence. I think I remember the boot up sequence was needed for a gui to be functional, and besides that it just made more things work as expected. The systemd-nspawn command uses the -b flag. Remove that flag and it should act just as a chroot.
I recommend you read the manpage for systemd-nspawn.
