There are a few more entries at [8.46] to [8.64] related to the serial interface. Since you see them after booting, then the devices have been detected and mounted, and the /dev entries are there and they work. I think the RPi linux portion works -- everything looks nice in the logs.
Shifting to the next level of troubleshooting, if you are using MicroPython or CircuitPython or something else, see if there is something different in the startup process of your app between 'both works' and 'one works'. Some things don't like to run in parallel -- I might test spacing out (or serialize) connecting the app to the Picos. Unless someone else chimes in, I don't have much else to offer -- I only use Linux Mint on a normal PC to run my Pico dev stack.
